Cheesy Shells 1

Cheesy Shells with Applewood Bacon is nothing short of good old fashioned comfort food. This dish is so full of creamy, cheddar goodness with bits of heavenly smoked bacon in every bite that everyone will be clamoring for more. This recipe is not heart healthy but you can certainly use low fat substitutions with great results. Pair your dish up with a green salad and dinner is ready!

Ingredients:

  • 12 ounce package of medium shells, cooked according to package directions to al dente stage (or just a minute short of package’s recommended cooking time)
  • 6 slices Applewood smoked bacon, very crispy, drained and crumbled
  • 2 cups of shredded sharp cheddar
  • 4 tablespoons flour
  • 1 tablespoon butter
  • 4 tablespoons butter
  • 4 cups milk
  • 1 teaspoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

First we begin by preheating the oven to 375 degrees. Grease a 2 quart bowl with 1 tablespoon of butter and set aside.

In a large saucepan on medium heat, melt 4 tablespoons of butter. When butter is melted, add the flour and continually stir until well mixed and is just turning a tan color. (The longer you cook it, the deeper the color will become.) This method is called making a roux and it’s used for thickening sauces.

Next, you will slowly whisk in the milk, blending well. It will be have a thin consistency at first. In the above photo, you can see how it quickly runs down the side of the pot.

Continuing stirring the mixture, making sure you are getting the bottom of the pot because it can overcook quickly. Once it starts to thicken, turn the heat down to low and let it continue to cook until you see bubbles breaking through the surface. In the photo above, you can see how the mixture is starting to stick to the side of the pot.

After the sauce has bubbled for a minute or two, turn the heat off and add mustard, salt and pepper. Gently stir in the cheddar cheese.

Mix until thoroughly blended.

Stir in the crumbled bacon.

Gently add the shells to the sauce mixture, mixing thoroughly and pour into prepared baking bowl.

Bake for about 40 minutes or until bubbly and golden on top. Let it rest for 5 minutes, then serve. Enjoy!
