This quick and healthy dish is loaded with nutrients and is a filling side dish to accompany any meal. It has as much heat as you’d like to add and the splash of apple cider vinegar adds just the right amount of zip! And with no fat added, this is a dieter’s delight!

Even those who don’t care for cabbage want seconds! My son swore he would never eat cabbage in any form until he sampled this savory dish. Since then, I’ve never had any left over when I make it! Cole slaw, move over- there’s a new dish in town!

 

Ingredients-

  • 1/2 medium sized head of cabbage, coarsely chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 peeled and chopped tart apple
  • 1/4 cup of water
  • 1 tablespoon of cajun seasoning or to taste
  • salt and pepper to taste
  • a few tablespoons of apple cider vinegar

 

  • First we add the water, cabbage, onion, carrot, apple and water into a hot, large frying pan. Don’t worry if it appears to fill the pan too high, it will go down as it cooks.

  • Next, stir occasionally as it wilts and cooks down.
  • Continue cooking, about 8-10 minutes, until everything is slightly tender.

  • Add the apple cider vinegar and the cajun seasoning, tossing to coat.
  • Add salt and pepper to taste. Serve!
