Italian Stuffed Mushrooms

This Italian Stuffed Mushrooms recipe is a tasty morsel of classic Italian flavors. You can either eat it raw or bake them for a warm treat. These would be a great addition to any get together as an appetizer or hors d’oeuvres. For a vegetarian version remove the cheese from the recipe. I hope you enjoy them.

If using Mozzerella, place cheese into a food processor and chop into a fine grain 

Fill a bowl with water and a little lemon juice. Then place the mushrooms in it. Let them soak for a minute then use a paper towel to lightly scrub dirt.

Remove stems, cut the white inner edge under the mushroom cap, and remove gills. When finished with mushrooms place them basin side up on a cutting board.

 

Place the tomato, garlic, basil, cheese, vinegar, oil, salt and pepper into a bowl and mix thoroughly.

Fill the mushrooms cavity with the tomato mixture. Gently press it into the mushroom so it is packed securely.  Then place the stuffed mushrooms on a foil covered cookie sheet and bake them for 10-15 minutes at 350 degrees Fahrenheit.

 

Such a delicious treat made from a simple set of ingredients.

Ingredients
  1. 1 carton Baby Bella Mushrooms
  2. 1/2 to a whole Roma Tomato
  3. 2-3 cloves of Minced Garlic
  4. 2 tablespoons of fresh Basil chopped fine
  5. 3 1/2 teaspoons ground Mozzarella or Parmesan cheese
  6. 2 tablespoons of Olive Oil
  7. 1/4 teaspoon Black Pepper
  8. Season to taste with Salt
