Simple Salsa Verde

I love making this because you only need an oven and a blender, it makes a large batch and it tastes great on so many foods!

My son loves it on his burgers, my husband eats it up with tortilla chips and if I am not dipping my chicken tenders into it, I mix it with cheese and shredded chicken inside layers of tortillas for a quick baked casserole. It stores well in the refrigerator and you can even freeze it to use later.

 

  • 10 tomatillos, husks removed
  • 3 large pasilla peppers
  • 3 large onions, peeled and cut in half
  • 4 tomatoes
  • 1 or 2 jalapenos, whole
  • 6 unpeeled garlic cloves
  • vegetable oil
  • juice from 2 whole limes
  • a handful of chopped cilantro
  • salt

Directions-

  • First, we put the first 6 ingredients on a large baking pan, drizzle them with a little vegetable oil.

  • Bake in a 375 degree oven for about 30 minutes or until pepper skins start to blacken and the tomato skins crack.

  • Remove from oven and remove skins and seeds from tomatoes and peppers when cool enough to handle.
  • Then put peppers, tomatoes, onions, juices from the baking pan, cilantro and lime juice into blender along with the garlic squeezed from its skin. Blend in several batches if necessary. I also recommend you only put 1 jalapeno in the blender and if it is not hot enough for your liking, add the 2nd one after tasting.
  • Blend until chunky or smooth, which ever consistency you prefer.

Add salt to taste and more lime juice if desired.  Enjoy!

Making a simple green salsa is as easy as roasting some vegetables and tossing them in the blender with this recipe! This makes a large batch and I keep any left over in the refrigerator and, if you blend the mixture to a smooth consistency rather than chunky, it will taste great if kept in the freezer, too. This salsa is great with just tortilla chips, or use it as a dipping sauce for chicken or you can even slather it on your pepperjack cheeseburger for a great taste!

Notes
  1. When blending, only add one of the jalapenos to start with. If more heat is desired after tasting, add the second jalapeno and blend a little longer.
