Snowballs 1

These cookies have it all. Not only are they buttery rich, delicate, nutty and delicious, but they only require a few ingredients and are so quick and easy to make. My mom made these every Christmas and it’s a tradition I’ve carried on since everybody raves about these yummy goodies! This recipe is great for getting the little ones involved, too, since the cookie dough is easily rolled into balls for baking. Be forewarned, you may want to double the recipe as these Snowballs disappear fast!

Ingredients-

  • 2 sticks (1 cup) butter, room temperature
  • 1/4 cup granulated sugar
  • 2 cups flour
  • 1 cup ground (I prefer half chopped and half ground) walnuts
  • 1 teaspoon vanilla
  • Confectioners’ (10X or powdered) sugar

First we start by preheating the oven to 300 degrees.

Next, using a hand or stand mixer and beating the butter in a large mixing bowl until light colored and creamy. Then, add the granulated sugar to the mixing bowl and beat until well mixed.

Then, we add the flour, nuts and vanilla to the mixture. Starting at a low speed, mix the ingredients well.

At this point, you can refrigerate the dough for a few hours, which makes the dough firmer for easier ball rolling for little helper hands, or you can start rolling 1 1/4 inch balls right away.

You should get about 3 dozen balls from one batch. Place them on an ungreased cookie sheet and bake at 300 degrees for about 30 minutes or until they are just faintly browned.

As soon as they are removed from the oven, quickly roll them in the confectioners’ sugar and repeat once they are completely cooled. Enjoy!
